Ingredients: 30 clams or 600g of clams, 125g mung bean sprouts, 1 chili, 1 leeks
Seasoning: salt and sugar, each 1/2 tsp
Method:
1.Soak the clams in salt water for 30 minuets to let it spilt the sand out. Clean the shell of the clams.
2.Place the clams in boiling water until the shell is opened, then drain and scrap out the meat.
3.Discard the head and the tail of the mung bean sprouts, clean the chili seeds and cut into threads, and cut the leeks into even lengths.
4.Heat 4 tbsp oil in wok and stir fry leeks until fragrance, then keep adding in the mung bean sprouts, chili, clam and season until well combined.
