Ingredients: 30 clams or 600g of clams, 8 fresh raw mushrooms, 1/2 chicken breast, 1 egg, 2 celeries, 5 Chinese water chestnuts
Seasoning: 1tsp salt, 1/2 tsp sugar
Method:
1.Soak the clams in salt water for 30 minuets to let it spilt the sand out. Clean the shell of the clams.
2.Place the clams in boiling water until the shell is opened, then drain and scrap out the meat.
3.Finely chop the chicken breast until it is in paste form, add in egg whites, and combine until sticky.
4.Discard the celeries’ leaves and dice it, un-skin the Chinese water chestnuts and chop finely. Combine the chicken breast paste and water chestnuts well, and then stir in 1/2 tsp salt and sugar.
5.Discard the stalk of the mushrooms, place in the clam meat and then stuff with chicken paste.
Boil water, place in the clam mushroom meatball to cook for about five minutes and then done after add 1/2 tsp salt.
