New concept of health – Tuna sashimi

Because the reason of the national living standard has increased significantly, in order to chase the healthy body and delicacy on drinks and foods, people now are switching to low fat food. If we look carefully at the tuna sashimi, it contains large amount f EPA and DHA that can prevent coronary thrombosis and thrombus; with goods source of animal protein, rich methionine and cystin which can consolidate the function of liver. Furthermore, the vitamin B6 and niacin can help kids to grow and prevent arteriosclerosis; rich nucleic acid can prevent aging; high amount of taurine can lower the blood pressure and cholesterol; iron and vitamin B12 can prevent and cure anaemia; rich potassium can stabilize the function of nerves and mussels. Therefore, tuna is a good healthy food for nowadays’ people.

The tuna meat that used for tuna sashimi are mainly catch by long-line fishing, catches includes blue-fin tuna, southern blue-fin tuna, big-eye tuna, yellow-fin tuna and more other fish kinds. Among all the tuna fishes, because the blue-fin tuna and southern blue-fin tuna are living at colder area in the sea, which makes them contains more fish fats, and since rareness of the fish kinds compare with other kinds of tunas, so it have the highest price. If compare by different part of the fish body, then the upper belly has the highest price. Use the Dunggan blue-fin tuna as an example, the unprocessed tuna belly price is NT$3,000 per kilogram, but the cheapest tuna part is only about NT$300 per kilogram. Since the fishing season for blue-fin tuna and southern blue-fin tuna only lasts few months every year, by the market economy perspective, the big-eye tuna and yellow-fin tuna are the kind of tuna that can be catch anytime during the year, if the catching season and the location of the catches are right, then the fats that contains in the tuna and the taste will be as good as blue-fin tuna or southern blue-fin tuna. Therefore, during the off season of the blue-fin tuna and southern blue-fin tuna, if consumers can switch to eat big-eye tuna and yellow-fin tuna, then consumers still can the high quality tuna sashimi.

The Fishery Administration pointed out that in the past it is not popular for people to eat tuna sashimi in our nation, the tunas that catch by Taiwan are mainly exported to Japan (every year, there are about a hundred thousand tons of tuna exported to Japan, which is about one third of Japan sashimi market.), and because there is no complete marketing channels and systems in the national, which cause the source of national tuna sashimi unstable, and the uneven quality, also cause people have no confidents with tuna sashimi and getting into the habit of eating tuna sashimi. By this reason, the Fishery Administration want to expand the national tuna sashimi market, to solve the problem of our tunas are depending on a single market – Japan, which causing unable to readjust the supply and demand problem. Now there is a plan to reorder and combine all the proprietor who also have the common intention and all the local public health departments. By using the plan, the vertical alliance and horizontal reordering, with right marketing strategies, establish a tuna sashimi sanitation standard and tracing fish processing flows for check up. By all of above series actions, it can redirect the tuna suppliers and consumers will have brand-new concepts on how healthy and safety to eating tuna sashimi, so hope it will increase the consumers’ confidence towards eating tuna sashimi.
