Processing and treatment of fishery products

1‧Studies on fish processing and treatment

  In recent years, due to the quick development of aquacutural fisheries, milkfish and tilapia were produced plentifully; however, the prices of these fish dripped drastically so that the fishermen grumbled incessantly. In view of such problems, TFRI devoted itself to develop some processed products such as dried millfish, canned milkfish, seasoned bone-softened milkfish, milkfish balls and seasoned tilapia fillet, etc...These products help to increase the economical value and regulate the production and marketing of tilapia. TRFI successfully developed the frozed tilapia fillet to be eaten-raw by means of a caron monoxide treatment. These studies that were mentioned concerning fish processing techniques were real demands that coincided intimately with our fisheries policy.

2‧Studies on shellfish processing and unilization

  In the last three years, the production of the small clam was not stable; therefore, it was necessary to regulate its production and marketing and to increase its economical value. TRFI acceped the entrust of the Hualien County Government to conduct the studies on the processing of fresh-water clams. So, TRFI actively conducted a feasibility study of fresh-water clam extractive powder (FCEP) processing. The FCEP was judged to be feasible according to its quality and sanitation. Now, the spray-granu-lated FCEP has been deeloped successfully. At present, some official fisheries-re-lated organizations and the Hualien County Government instructed the Lih-Chuan Farm to produce fresh-water clam extractive (FCE), FCEP and seasoned FCEP. Other shellfish processed products such as oyster extractive powder and clam extractive powder have also been studied. Now more than ever, the processing and utilization of the by-product of fresh-water clam extraction is devotedly being studied.

3‧Studies on seaweed processing and utilization

  The nutritional value of the seaweed is very high. The agar which is made from seaweed Gracilaria sp. using an acid-im-mersing treatment was developed first by the TFRI. Such a technique not only increased the production of agar, but it also increased the economical value of Gracilaria sp.. Also, it showed that the processing of agar from either Gracilaria sp., alginic acid or from Sargassum sp. was effective. Bright-green seasoned Gracilaria sp. was successfully made by the greening and seasoning treatments.

4‧Studies on fish feed

  The feed for sea-water fish has been developed. In order to decrease water pollution and to conquer the bottleneck of the growth of sea-water fish, the attractiveness of the feed needs to be improved, the nutritional compositions should be examined and the appropriate binders should be chosen. Techniques and information of feed units such as yeast powder, canola meal and low-grade flour for feeding fish and shrimp have been established.
