Spear Shrimp can be found easily around Taiwan coastline, fishing season is each November till May of next year. Mostly are sale as live shrimps, or freshly frosted, but some are also processed for shrimp mince. After been defrosted, cleaned, and disinfected and dried processes, dross elimination to make it into dried shrimp. Depends on the size of shrimp, it separate into large, medium and small classes, packaging according to kilogram and deliver to South and North medium size dealer. Large spear shrimps are very expensive, and medium spear shrimps are most popular. When choosing spear shrimp, choose the ones that have beautiful, shinning and nicely dried shrimp, with complete outfit and less salt and sugar as basic conditions.
